Cooking at home has shifted from hobby to necessity for many people, but that doesn’t mean it can’t still be fun and rewarding. One of the challenges is the limited ability to simply run to a store for missing ingredients, but in the right hands that can be a way to get creative.

Todd Anderson — who loves cooking and food, generally — sent this recipe for gluten-free peanut butter cookies. It comes from Alton Brown’s “Pantry Raid” web videos, where he uses typical ingredients to create simple recipes.

Forcing yourself to use only what’s in the cupboards is actually great way to learn new recipes, as well as clearing out those aspirational ingredients from the back of the shelf. This series is a great place to start, but it doesn’t have to be the only place. If anybody has their own “pantry raid” recipe to share, please feel free to email it.
